Banana Nut Bread

The maple sugar and the dollop of mascarpone make this a tender texture.
The pecans are optional

  • Cups flour
  • tsp. Baking soda
  • ¾ tsp. sea salt
  • 1 Cup Maple sugar You can use dark brown sugar
  • Cup Mascarpone cheese
  • ¼ Cup unsalted butter Room temperature
  • 2 lrg Eggs
  • 4 ripe Bananas Very ripe, mashed about 1 1/2 cups
  • ½ Cup Semi sweet chocolate optional
  • ½ Cup Chopped Pecans optional


  • Preheat oven to 350°
  • Lightly oil a 8x4 loaf pan
  • In a mixing bowl, whisk together flour, baking soda and salt together.
  • Using a mixer, blend the sugar, cheese and butter to cream together, add one egg at a time to get a creamy texture. Add the flour mixture just to combine, then add the mashed bananas (this is when you would add chocolate and pecans). Pour into the prepared loaf pan. Bake 60 minutes or using the toothpick method, remove when the toothpick inserted pulls out clean.
